Description  A light snack made with Semiya and Vegetables

 

Ingredients

  • 2 cups Semiya (Vermicelli)
  • 1 cup onions finely chopped
  • 1 cup tomatoes finely chopped
  • 2 green chillies finely chopped
  • 1 cup mixed vegetables chopped into small pieces (carrots, beans, peas etc)
  • 1 tsp mustard seeds
  • 1 tbsp oil
  • 1/2 tsp turmeric powder
  • a few curry leaves
  • salt to taste
  • juice of half a lemon
  • coriander leaves for garnishing

 

Method

  • Bring 6 cups of water to a boil. Add the semia and cook till done. Drain the water. Rinse in cold water and keep aside.
  • Heat the oil in a kadai. Add the mustard seeds and curry leaves.
  • Add the onions and green chillies and saute till the onions turn transparent.
  • Add tomatoes, turmeric powder and salt and cook for a few more minutes.
  • Add the vegetables and a little water and cook covered till the vegetables are done.
  • Add the semia and mix well with a little lime juice.
  • Garnish with chopped coriander leaves.

Serve with coconut chutney or tomato chutney.
