Description A light snack made with Semiya and Vegetables

Ingredients
- 2 cups Semiya (Vermicelli)
- 1 cup onions finely chopped
- 1 cup tomatoes finely chopped
- 2 green chillies finely chopped
- 1 cup mixed vegetables chopped into small pieces (carrots, beans, peas etc)
- 1 tsp mustard seeds
- 1 tbsp oil
- 1/2 tsp turmeric powder
- a few curry leaves
- salt to taste
- juice of half a lemon
- coriander leaves for garnishing

Method
- Bring 6 cups of water to a boil. Add the semia and cook till done. Drain the water. Rinse in cold water and keep aside.
- Heat the oil in a kadai. Add the mustard seeds and curry leaves.
- Add the onions and green chillies and saute till the onions turn transparent.
- Add tomatoes, turmeric powder and salt and cook for a few more minutes.
- Add the vegetables and a little water and cook covered till the vegetables are done.
- Add the semia and mix well with a little lime juice.
- Garnish with chopped coriander leaves.
Serve with coconut chutney or tomato chutney.
