Description
Spicy pakodas in a delicately flavoured gravy.
Ingredients
1and 1/2 cups channa dhal
1/4 cup onions chopped fine
1 cup grated onions
1 tbsp ginger garlic paste
3 tbsps tomato paste
2 tbsps cashew or almond paste
2 tsps chilli powder
1/2 tsp turmeric powder
1tsp coriander powder
1/4 tsp garam masala
2-3 cloves
1/2 inch piece of cinnamon
2-3 pods of cardamon
2 cups coconut milk
salt to taste
2 tsps chopped coriander leaves
oil for deep frying

Method
For the pakodas
Soak the channa dhal in water for an hour
Grind it to a course paste adding very little water (Batter should hold its shape)
Add salt, a little chilli powder, garam masala and chopped onions
Heat oil in a deep pan
When oil is hot enough drop small balls of the batter into the oil and fry till golden brown.
Drain the oil on an absorbent paper.
For the Gravy
Heat 2 tbsps oil in a wide bottomed pan
Add cinnamon, cloves and cardamon
Add the grated onions and cook on a low flame till the onions turn golden brown
Add ginger garlic paste and saute for a min
Add turmeric powder, chilli powder, coriander powder, garam masala and salt
Add cashew paste and coriander leaves and saute. Add a little water if it is too dry
Add tomato paste and cook
Add some water and cook for a couple of minutes
Add coconut milk and simmer
Add the pakodas into the gravy just before serving
Garnish with chopped coriander leaves

Tips
Add warm water to grated coconut and blend it. Strain the pulp to make coconut milk
