Secret Tip Add a few fenugreek seeds (menthulu) soaked in hot water for a few minutes to the Thalimpu(Seasoning) and No Safron Please
Ingredients
- 2 cups basmati rice
- 4Â cups coconut milk
- 2 cups water (Use 1 cup if you like your rice to be a bit dry
- 1 large onion finely sliced (thin and long)
- 2 tbsp butter or smart balance
- 1 (1 -2″) stick of cinnamon, 3 cardamon, 3 cloves, 1/4 tsp fenugreek (menthulu)
- 1/4 tsp turmeric
- 1/2 tsp chilli powder
- 1/4 tsp garam masala
- 1/2 tsp ginger garlic paste
- Whole/halved raw cashew nuts (optional)
Preparation Metod
- Soak the fenugreek in hotwater for atleast 15 minutes.
- Wash and soak the rice in water
- Use dish that has a heavy bottom and a lid
- Add butter and heat it. When it is sizzling, add the seasoning -fenugreek. cinnamon, cloves and cardamon
- Add the onions and roast till golden brown on medium high flame
- Add the ginger garlic paste and roast till it is golden brown and smells good
- Add the cashews
- Add the turmeric, salt, chilli powder and garam masala and toss with the rest of the spices and onions. Make sure it does not burn
- Now strain all the water from the rice and add it to the spices
- Toss it with the spices till it is well coated with the butter and spices and all water has evaporated
- Add coconut milk and water and continue to heat it till it comes to a boil
- Check the milk and water mixture for salt and add to taste
- After it comes to a boil, stir the rice, lower the heat and cover the dish with a tight lid
- Let it cook for about 20 mins on low heat. You will know it is done when all the water is gone and the rice is cooked long, flaky and golden brown and is not sticky. YUM
