A rice dish prepared with grated fresh coconut

Ingredients
- 4 cups cooked rice
- 2 cups grated fresh coconut
- 3-4 red chillies
- 1/2 tsp mustard seed
- 1 tbsp channa dhal (optional)
- a few curry leaves
- a pinch of hing
- salt to taste
- 2 tbsp oil
Method
- Heat the oil in a kadai and add the mustard seeds, curry leaves, hing and red chillies. You can add the channa dhal and fry it is lightly browned
- Add the freshly grated coconut to this and saute for about 5 mins
- To this add the cooked rice and mix well. The rice should be cooled before adding to the coconut
- Season with salt and let it cook for a couple of minutes.
