A spicy gravy made with soya nuggets and vegetables

Ingredients

  • 1 cup soya nuggets
  • 1 cup diced capsicum or potatoes
  • 1 cup grated onions
  • 1 tbsp ginger garlic paste
  • 1/2 tsp turmeric powder
  • 2 tsp chilli powder
  • 1 tsp coriander powder
  • 1/4 tsp garam masala
  • 2 tbsp cashew paste
  • 3 tbsp tomato paste
  • salt to taste
  • 3 tbsp oil
  • chopped coriander leaves

Method

  • Soak the soya nuggets in hot water for at least an hour
  • Drain them and marinate them with a little ginger garlic paste, turmeric powder, chilli powder and salt
  • Heat the oil in a kadai
  • Add the grated onions and saute them till they are golden in colour
  • Add the remaining ginger garlic paste and saute
  • Add the turmeric powder, chilli powder, coriander powder, garam masala and salt.
  • Add the cashew paste and a few coriander leaves and fry for a few minutes on a slow flame.
  • At this stage you can add the vegetables and the soya nuggets and fry them with the masala
  • Add some water and cover the pan. Cook on a slow flame till the nuggets are soft and the vegetables are cooked. (You can also steam them in a pressure cooker for 10 mins)
  • Add the tomato paste and simmer for some more time
  • Garnish with chopped coriander leaves
