Secret Tips
There are three secrets to this dish: 1. Don’t use turkey that is leaner than 7% or it becomes too dry, 2. Make sure to use fresh, flavorful garam masala and dhania powder and 3. Once you add the meat, allow it to fully cook in the onion and ginger-garlic mixture.
Ingredients
2 trays lean ground turkey (7% fat)
1 large white onions chopped
3 heaping teaspoons of ginger garlic paste
1.5 tsp chili powder paste (powder + water)
2 roma tomatoes chopped
4 heaping teaspoons dhania powder
2 heaping teaspoons of garam masala
2 tsp tomato paste (mixed with hot water)
½ cup peas (can be frozen)
Preparation Method
Heat oil and add 9 cardamoms, 4 cinnamon sticks, and 8 cloves
When fragrant, add onions and cook until brown.
Add ginger garlic paste and cook
Add chili powder paste, 2 tsp salt, 1 tsp turmeric powder
After ginger garlic paste is almost cooked, add meat and mix together
Cook until meat is fully cooked (this is key to the taste)
Then add dhania powder and garam masala and cook
Add additional salt if necessary
In a small bowl, add tomatoes with pinch of salt, turmeric, chili powder, and oil and cook in microwave for 3 1/2 minutes.
Add tomato mixture to cooked keema
Add tomato paste
Sautee for a couple of minutes
Add peas when keema is done
