Description: Aanapkai or opu is a mild green squash dish, typical in Andhra households. It’s a simple, fresh and easy dish.
Secret Tips: The flavors in this dish are relatively simple so it’s key to start with fresh, good quality opu for best results.
Ingredients:
1 squash – peel skin and cut into small cubes (usually found in Indian store)
½ medium chopped onion
1 large green chili chopped (mash with 1 tsp cumin seeds)
1 heaping tsp dhania powder
¼ tsp turmeric
Roasted sesame seeds (powder in a blender)
Preparation Method
Put raw squash in a container and add pinch of salt, turmeric, and chili powder and 1 tsp of oil and heat in microwave
Heat oil on medium heat
Add chili-cumin mixture
Add onions and allow to brown
Add 1/4 tsp turmeric
Add 1 heaping teaspoon dhania powder
Add aanapkai
Add 2 heaping teaspoons of sesame powder
Allow to cook for about 10 minutes
Add 1/ 4 cup milk when 3 / 4 cooked
Allow it to cook in milk until done (cooked but firm)
Add cilantro and another teaspooon of sesame powder
