Description:
Mixed vegetables in a spicy coconut milk curry.
Ingredients:
One head of cauliflower: chopped into small pieces, add turmeric, salt, chili powder, a little water, and cook in microwave with 5 minutes
One medium onion chopped
2 tomatoes, cut into small pieces
2 cups of frozen mixed vegetables
2 potatoes – boiled, peeled, cut into 1.2 inch pieces
1 can coconut milk
Dhania powder – 3 tsp.
Garam masala – 1 tsp.
Yoghurt – 1 cup
Chili powder paste – Add a small amount of water to 2 tsp. chili powder
Ginger-garlic paste – ½ tsp
Preparation Method:
In a wok, heat 3-4 tbsp of oil and chopped onion.
Sautee until golden brown and add1/2 tsp ginger-garlic paste.
Add turmeric and chili powder paste.
Then add dhania powder and garam masala
Then add the potatoes and sautee in the masala-onion mix.
Add salt to taste.
Add cauliflower and ¼ cup of water if needed.
When the vegetables are ¾ cooked, add the frozen mixed vegetables.
Sautee together.
Add tomatoes and allow to cook for about 5 minutes.
Add yoghurt and coconut milk and let it simmer for 5 minutes.
Add salt to taste and garnish with cilantro.
