Description Chicken cooked in a flavourful rich gravy that is great with Nan or Chapathi (Indian Breads)

Secret Tip: Marinade the Chicken and Refrigerate overnight

Ingredients

  1. 2 lbs Boneless Chicken Breast cut up in 1″ cubes
  2. Marinade – Tikka masala paste 1 tbsp, Garlic powder 1tsp, Chilli powder 1tsp, 3 limes Juice, Olive oil 2 tbsp, Salt to taste
  3. 1/2 stick butter (can sub with smart balance or vegetable oil)
  4. 2 tbsp finely sliced ginger in thin long slivers
  5. 2 tbsp thinly sliced hot green peppers
  6. 1/2 cup (4 oz) Sour cream
  7. 1/2 cup half and half
  8. 1/2 cup (4 oz) Tomato paste
  9. 1 small can Chicken Broth (2 cups)

Method of Preparation

  1. Wash the chicken in cold water. Squeeze out all the excess water
  2. Mix all ingredients of marinade and increase chillipwder and salt to taste
  3. Marinade the chicken and refrigerate overnight
  4. Broil chicken in a preheated oven for 20 mins ( make sure chicken is moist and soft). You can also stir fry the chicken on hight heat on a pan on the stove top.
  5. In a large Saute pan melt the butter. When the butter is foamy add the ginger and hot peppers and toss them around till they are fragrant and lightly browned
  6. Add the tomato paste and 1/2 cup od chicken broth and let it simmer on low heat till the butter separates from the gravy
  7. Lower the heat and add the sour cream and cilantro
  8. Now raise the heat and when the gravy is bubbling add the chicken
  9. Add the remaining chicken broth and let it cook on medium heat for 20 mins
  10. Add the half and half and turn off the heat
  11. Garnish with freshly chopped cilantro
