Description Chicken cooked in a flavourful rich gravy that is great with Nan or Chapathi (Indian Breads)
Secret Tip: Marinade the Chicken and Refrigerate overnight
Ingredients
- 2 lbs Boneless Chicken Breast cut up in 1″ cubes
- Marinade – Tikka masala paste 1 tbsp, Garlic powder 1tsp, Chilli powder 1tsp, 3 limes Juice, Olive oil 2 tbsp, Salt to taste
- 1/2 stick butter (can sub with smart balance or vegetable oil)
- 2 tbsp finely sliced ginger in thin long slivers
- 2 tbsp thinly sliced hot green peppers
- 1/2 cup (4 oz) Sour cream
- 1/2 cup half and half
- 1/2 cup (4 oz) Tomato paste
- 1 small can Chicken Broth (2 cups)
Method of Preparation
- Wash the chicken in cold water. Squeeze out all the excess water
- Mix all ingredients of marinade and increase chillipwder and salt to taste
- Marinade the chicken and refrigerate overnight
- Broil chicken in a preheated oven for 20 mins ( make sure chicken is moist and soft). You can also stir fry the chicken on hight heat on a pan on the stove top.
- In a large Saute pan melt the butter. When the butter is foamy add the ginger and hot peppers and toss them around till they are fragrant and lightly browned
- Add the tomato paste and 1/2 cup od chicken broth and let it simmer on low heat till the butter separates from the gravy
- Lower the heat and add the sour cream and cilantro
- Now raise the heat and when the gravy is bubbling add the chicken
- Add the remaining chicken broth and let it cook on medium heat for 20 mins
- Add the half and half and turn off the heat
- Garnish with freshly chopped cilantroÂ
