Description Dhal recipe with ridge gourdÂ
Secret Tip Ridge gourd can be substitued with any other vegetable like bottle gourd, chopped spinach etc.  You can also add a little hing to the tempering to give it a good flavour.

- 1/2 cup Moong dhal
- 1 1/2 cups cubed ridge gourd (Beerakaya)
- 1/2 cup chopped onions
- 1/2 cup chopped tomatoes
- 2 green chillies slit lengthwise
- 2 tsp Oil
- 1/2 tsp mustard seeds
- 1/4 tsp turmeric powder
- 3 cloves of crushed garlic
- 2 red chillies
- A few curry leaves

Method of Preparation

- Lightly roast the moong dhal until it changes colour.Â
- Wash the dhal and put the dhal in a pressure cooker.
- Add the ridge gourd, onions, tomatoes, green chillies, turmeric powder and salt.Â
- Add water and pressure cook for 2 whistles.
- Separately heat oil. Add the mustard seeds. When they crackle add the curry leaves, garlic and red chilles. Â Add this to the cooked dhal and simmer for a few minutes.
- Salt to taste
